Since B has been gone, I have had the most ridiculous dinners. Night one, I made cheesy poofs as a snack and ate so many of them I felt sick and didn't have dinner. Hot, I know.

Night two, I made a batch of flourless peanut butter cookies. They were super easy and used only 3 ingredients: brown sugar, pb, and an egg. amazing!

Then last night, after I had 2 tacos from the taco truck near my buddy's house (one pollo, one carne asada - delicious and only $1 each), I came home and decided to whip up a batch of biscuits and gravy. Delicious, but I can't just keep eating sugar and flour.
Here's me & Taz having a cookie break. He's got a pb dog cookie & I have a pb human cookie - precious.

Ok, I officially quit

Finally went grocery shopping, which was awesome! I think we managed to go about 3 weeks, but things were getting dire there towards the end. And I kind of feel like I might be a better grocery shopper now. I try to stick to buying stuff I'm going to use in the immediate future, rather than getting things that look interesting but have no practical use.

To celebrate, we made a big breakfast, with bacon & eggs & toast. Pretty sure we ran out of bread (and end pieces, even) about 2 weeks ago, so the toast was a nice touch.

Then our neighbors had a bbq that evening. We had t 2 types of chicken: one with bbq sauce (on the right) and one with lemon, rosemary & garlic (left); french bread & mashed potatoes with gruyere and bacon (I was amazed by this concept).

Veggie Remix

Inspired by a week of modesty and countless efforts to spice up the same boring thing over and over (combined with the fact that we officially have no meat, fish, or tofu), I turned the carrots and squash into a different meal: potatoes au gratin with stir fried garlic.

Potatoes Au Gratin
Ingredients: potatoes
cheese (shredded)
butter
milk (or cream)
onion

Directions:
1. Slice all the potatoes. Make sure they are an even thickness. Chop up the onion (doesn't need to be particularly thin slices).
2. Put a layer of potatoes in a casserole dish. Sprinkle some onions on top, then a layer of cheese. Continue making these layers until you run out of potatoes.
3. Pour some milk over top of the potato mix (enough to almost cover the potatoes), then place pats of butter over the potatoes.
4. Cover and bake at 350 for about an hour.
5. Stir the potatoes after the hour, then return to the oven uncovered until the cream thickens up.

Potato recipe from here.

I cheated!

... and bought some veggies. But made a point to only buy those veggies I've been so deprived of lately. Took my newly acquired squash, onion, and cilatro, mixed it with some carrots I got for free in Santa Cruz, and fried it up with rice. Then I made some hummus with the last can of garbanzo beans, opened up the tin of black olives & called it a feast! Trust me, compared to plain starch, it was.

Project Eat Everything: Day 10?

Got back from Santa Cruz and was faced with an even bare-er cupboard. Managed to eke out one more day's worth of meals though. For breakfast/lunch I had Khao Thom (a soup they eat for breakfast in Thailand. It usually has some form of protein and rice), then B made Asian-style stir fry veggies on pasta for dinner.

Project Eat Everything: Day 7

Today I had black beans and white rice with cheese melted on top. Pretty damn good, but that may have been the cheese. Then B bought me a sandwich from Mickey's Deli in Hermosa Beach, which was AMAZING!! I ate half for lunch, and saved the rest for my drive to Santa Cruz.

The trip to Santa Cruz fully derailed my experiment. My friends took me out to a sushi dinner for my bday (thanks guys - I'm still dreaming of it), made a fat breakfast with homegrown eggs, and cooked a big fish dinner too. Delish!

Project Eat Everything: Day 6

I know I fell off the wagon with writing up my project, but I wanted to let you know that I did make it further than 5 days, and here is the proof: Today's meals included a veggie soup (made with a can of V8, some frozen veggies, and a bunch of creativity) and Trader Joe's Shrimp & Veggie stir fry over pasta (pretty good with parmesan cheese on top).

Project Eat Everything: Day 5

Ok. Since I am looking after 2 puppies that are not housebroken (I'm not talking about Taz, thankyouverymuch), my imagination and wits are being stretched. So much so that I finished those hot wings & papa's potatoes for breakfast/lunch. Then I made frozen fried rice for dinner (but i DID scramble an egg), so it wasn't completely ridiculous.
Then binged out at night with a piece of pizza toast (a desperate derivative of pizza bagel and pizza muffin) with black olives.
Followed by some popcorn (thanks B!).

Project Eat Everything: Day 4

Today I ate the canned ravioli for lunch. Not terrible, but not great. Let's just say the picture looks better than it tasted.
B had the last top ramen with veggies.
For dinner, we broke down & ordered Papa Guido's pizza for delivery. Only I got hot wings (& papa's potatoes) and B got chicken strips. Man, I miss that place. It used to be my regular hang out. I mean, cheap beer and biking distance from home really made the place!

Project Eat Everything: Day 3

Relatively unimaginative spread for today. Finished off the quinoa/veggie mix as well as the grapes for lunch. In the interests of not boring you completely senseless, I will not post pics. B had a chicken breast sandwich, which I forgot to take a pic of.

For dinner, I baked some leftover penne with pasta sauce, capers & cheese.

Project Eat Everything: Day 2

Ok, it is day two and the reality is starting to set in. The frozen veggies are dwindling, and it's becoming clear that this mission needs to be accomplished fast. Which will require creativity. Not that today was the day to start being creative.

Anyways, lunch was quinoa - cooked with canned chicken broth & garlic powder - with frozen stir fry veggies.

The same quinoa appeared at afternoon tea, remixed with the rest of the hummus & green olives.

Dinner was chicken and boxed mashed potatoes. Ketchup was an attempt to eat something that wasn't brown.

Late night snack was the rest of the bbq chicken made into chicken salad and stuffed in the last fresh tomato.

Dessert was blueberry pancakes made with the fresh blueberries and a tin of waffle mix.

Project Eat Everything: Day 1

Day 1 was easy, since I still have something that resembles a vegetable. And since we started this challenge at night, I only had to come up with one meal. So here we have it: stir fried veggies & left over bbq chicken in olive oil, garlic & a little parmesan.

Dessert: oatmeal with blueberries.

Introducing: Project Eat Everything

B had an awesome idea today: we are going to try to eat everything in our house before we go grocery shopping again. I will take pics every day of my meals to see if there is anything interesting that can be made with a ton of starch and random Asian spices. We seriously have SO much stuff sitting around that this is an awesome idea. And you all know I'm up for a challenge. Starting NOW!

So here are the before pictures. And in the name of science, the before contents of my kitchen.

Cupboard contents: 1 box Cheerios, 1 box Joe's Os, 2 boxes sugar packets, 3 containers pancake mix, 1 container rolled oats, 1 jar pasta sauce, 4 packets of various pastas (stick, penne, farfalle, egg noodles, pad thai noodles), 1 packet ramen, 5 packets of instant pasta, brown sugar, cocoa powder, oil, rice (brown, white, arborio & sticky), popcorn, 1 box instant oatmeal, 1 jar salsa (big papi brand -very unlikely it will be eaten), 1 box full of random spice packets my mother gave me (tom yum mix, rendang mix, soto ayam, garlic herb potato seasoning, tamarind, hollandaise sauce - told you it was random. Also unlikely this will be eaten), 2 boxes of tea bags, 3 cans pineapple, 2 cans tomato sauce, 1 can tuna, 2 cans chicken broth (and some stock cubes), 1 can chicken noodle soup, 1 can beef ravioli, 3 cans beans (kidney, garbanzo & black), 2 limes, 1 can olives, vinegar, worcestershire suace, instant mashed potatoes, gnochi, panko, qinoa, croutons, parmesan chicken mix, 2 cans coffee, vegemite.

Fridge contents: blueberries, parmesan cheese, homemade hummus, leftover bbq chicken & steak, green olives, mostly eaten jar of salsa, mayo, 2 tubs margarine, big bag of grated cheese, leftover beans, 12 pack Highlife, eggs (mostly eaten), homemade iced tea, cranberry juice, jim beam, grapes, parsley, 1 tomato, 1 carrot, 1 onion, mushrooms, precut pineapple.

Fridge door contents: 2 mini A1 sauces (thanks, Squaw Creek!), block of cheese, black bean & garlic sauce, 3 types of hot sauce, mustard, 1 jar capers, teriyaki sauce, ketchup, bbq sauce, caesar dressing, ranch & blue cheese dressings.

Freezer contents: 1/2 bag frozen shrimp, 4 chicken breasts, 3 bags frozen veggies, bag of edamame, bag of fried rice, bag of stir fry shrimp mix, 1/3 of a loaf of bread, 4 hamburger buns.

Other random shit lying around: soy sauce, ginger, garlic, seltzer water, 1 bottle vodka, 1 bottle gin, balsamic vinegar.

Upon reflection, I probably should have started this challenge right after a big grocery shopping trip, like when I have some milk and veggies. Some provisions may have to be made for this dilemma (I mean, we are going to run out of beer at some point)

Asian Tacos, Take I

In a moment of inspiration (read: we have run out of normal taco toppings) I decided to make Asian-ish chicken tacos. Just fried some chicken, and veggies in stir fry sauce (soy sauce, sweet soy sauce, vinegar, garlic & ginger) and threw it all in a hard shell taco. I was skeptical at first, but may be a convert.

Ah, Highlife, you make everything taste better...

Puppy's first taco:
Desert: Pancake with lime juice & sugar on top; eaten on the beach while watching a pumping lineup.

A Scramble to Rival Hughes's

Was inspired to make a decent breakfast this morning, so I decided to make a Greek-style scramble. Here are the ingredients all laid out: eggs, tomato, garlic, basil & feta.

The process ...
And the product...

On a Mediterranean Kick

Maybe it was boredom. Maybe it was all the articles about the village in Greece where people live to be 200 because they eat well and walk all the time. Either way, but I've been on a serious Mediterranean kick lately. I'm talking hummus, feta cheese, garbanzo beans, the whole nine yards. Here is an appetizer dinner that may have just become my dinner. Mediterranean Style Garbanzo Olive Salad and Saganaki (a Greek fried feta appy).

Salad: 2 c cooked garbanzo beans
1/2 c chopped black olives (I used green)
1/4 c finely chopped scallions
2 TBSP chopped corriander (or cilantro)
1 crushed garlic clove
salt, paprika, chilli powder,
lemon juice, olive oil

Saganaki: 8 0z feta cheese
1 egg
1/2 c flour
2 Tbsp olive oil
oregano

Slice feta into 2 x 3/8 inch squares. In a small bowl, beat the egg with oregano. Dip each slice of feta in egg, shake off excess, and coat in flour. Heat oil in a frying pan over medium heat. Quickly cook the cheese until golden, turing once.

Serving suggestion: serve with tomato slices and garnish with lemon wedges.

The pics are awful, but these are delicious! The feta gets all warm and melty, and the outside is just slightly crispy. So good!!

Eggstrordinary

My attempt at getting more veggies into my diet: Boiled egg on toast with spinach.

Psst! The secret ingredient is Vegemite.

Tortilla escapades

Had a little fusion meal tonight.
First, I made my own whole wheat tortillas; inspired by this post. Tortilla recipe from here.

Then I served them with homemade guac (recipe taken from the many early mornings spent at the Bagelry) and the Thai garlic shrimp I made earlier. So delish!

Tempura time

This was my first attempt at veggie tempura. I did zucchini, broccoli, and green beans. Turned out ok, actually.

Fish dinner

Salmon baked with mushrooms on top. On baby spinach with tomato/peach/strawberry salsa.

Some crazy fancy baked potato. Can't remember what it's actually called; something with an H.
